I know many of you have New Year’s Resolutions to eat healthier and exercise! Well, I can say that I have the same resolution….but we still have way too many Christmas goodies in the house! I’m failing miserably. However, this salad is incredibly easy and tastes fantastic, almost better than candy. I may have a winner to help me keep my hands off all the junk food. This is a great recipe for a quick throw together lunch, a dinner side salad, or even something you could take to a party.

Low in calories, and avocado has healthy fats and oils, so it’s very good for you. The balsamic vinegar and pepper give it a very nice, even flavor. Give it a try for dinner tonight! Or lunch tomorrow even!

Cucumber Avocado Salad

Ingredients:
3 washed tomatoes, chopped
2 ripened avocados, peeled and chopped
1 large cucumber,  chopped
2 tablespoons balsamic vinegar
fresh ground black pepper to taste
optional: juice of 1 lemon
Serves 4.

Directions:
Place chopped tomatoes, avocados, cucumber in a salad bowl.
Sprinkle with balsamic vinegar and lemon juice, then lightly mix with tongs.
Add fresh ground black pepper on top, and serve.
